Eating your greens is good for you

See your mother was right, eating all your greens is good for you, because now mums around the world have the backup from researchers at the Albert Einstein College of Medicine of Yeshiva University; they have found that nitrite which is a chemical found in most green leafy vegetables and some root vegetables, can help reduce tissue damage during an heart attack.

The nitrite is said to be the mythical element that provides the so called Mediterranean diet with its healthy properties. However the research has been confined to seeing how this chemical affects the bodies tissue around the heart after the person has suffered from a heart attack.

When someone suffers a heart attack the muscle tissue is starved of oxygen and it is this, what causes the permanent damage, but with a high level of nitrite obtained from foods the fall in oxygen triggers nitrite to go into action and it is this that helps to minimise the tissue damage.
